At Hyatt Centric Juhu Mumbai, dining is treated as an experience, not just a meal. The culinary team builds menus that pair familiar Indian flavours with a genuinely modern sensibility, spanning everything from indulgent breakfasts to sophisticated takeaway selections. Every plate balances visual artistry with real depth of flavour.
That approach reaches its most theatrical form at Sesame. This is the hotel’s Japanese and Pan-Asian restaurant. An open kitchen puts the culinary craft on full display. Because of that, each meal feels closer to performance than dinner. Creative mixology runs throughout, alongside dramatic plating. On top of that, the menu keeps evolving. The result is a vibrant space where authenticity meets experimentation. It’s built around flavour, culture, and connection. I had a chance to experience a meal at Sesame myself, and here are my honest thoughts.
Food & Drink
Dinner at Sesame unfolded through a beautifully presented run of Asian-inspired dishes, each with its own distinct character. The meal opened with watermelon tataki, a refreshing and unexpected start. The Dragon Sushi Roll followed next, layering seared salmon, spicy mayo, tobiko, and tempura shrimp, finished with dramatic dragon flares that made quite an entrance.

Prawn Hargao came after, combining succulent prawn with bamboo shoot, green onions, and a chilli bean dip. Rock Shrimp Tempura offered a crisp, indulgent contrast, pairing deep-fried tempura with citrus teriyaki, chilli garlic mayonnaise, spring onions, and sesame seeds.

Fried ice cream at Sesame
For the main course, Salmon Tataki brought real nuance to the table, accented with Tobanjan and shirae. Dessert closed things out on a decadent note. Fried ice cream arrived first, followed by a classic tiramisu, a fitting finale to an evening built around inventive Asian flavours and polished presentation.
Service
Service throughout was polished, attentive, and effortlessly intuitive. From the pacing of each course to the smallest details, the team delivered a seamless, genuinely personalised experience that matched the restaurant’s sophisticated setting at every turn.
Price
Approximately INR 2,500+ per person.
Verdict
Sesame earns its “Theatre of Flavours” billing through genuine craft, not just presentation. The open kitchen, the evolving menu, and dishes like the Dragon Sushi Roll and Salmon Tataki give the restaurant real identity within Mumbai’s crowded dining scene. For guests at Hyatt Centric Juhu or anyone seeking out Japanese and Pan-Asian cooking with real theatre, this is a strong reason to book a table. hyatt.com
